Crispy, Creamy, Unexpected: Seoul’s Makchang Moment at BBQ Danmak

Some places go viral. Others earn it.

On a weekday night in Seoul, BBQ Danmak had us waiting over an hour for a table – never a bad sign. With social media buzzing, we came curious, slightly skeptical, and very hungry.

BBQ Danmak specialises in makchang-gui – grilled pork large intestines. Not exactly the first thing that comes to mind for most diners, especially if you grew up in Southeast Asia, where entrails are often slow-braised into rich, comforting dishes. This? A completely different experience.

The makchang arrives glistening from a patented 450°C single-fire oven – a technique that renders the fat, crisps the exterior, and transforms the texture entirely. No gamey smell. No heaviness. Just a crisp bite that gives way to a creamy, almost melting interior with a gentle chew. It’s the kind of dish that makes you pause mid-conversation.

We ordered a second portion without discussion. Some decisions don’t need words.

While pork is the focus, the menu stretches across beef cuts, tripe, and other offal. We added pork skin, jowl, neck, and beef to the grill – all solid, but when the star shines this brightly, everything else naturally falls a little into the background.

Service is seamless, especially for first-timers. Staff handle the grilling, making it accessible for tourists and those less confident at the table. It keeps the experience relaxed and lets the food do the talking.

To balance the richness, we were served naengguk – a chilled, tangy soup perfect for Seoul’s summer heat. It cuts through the grease and refreshes the palate. On the side, the iron plate fried rice and sae-song doenjang-jjigae (soybean paste stew with mushrooms) were comforting, well-executed additions that tied the meal together.

The space itself is lively and unfussy. No gimmicks, no over-designed corners. The only thing Instagram-worthy here is the food – exactly how it should be.

Makchang may be a regional dish from Daegu, but BBQ Danmak has reimagined it with modern technique and broad appeal, introducing it to a new generation of diners. It respects tradition while pushing it forward.

And for that, it earns a well-deserved Humble Mention.
